In the climax of Episode 1, Guideau reveals that she was cursed by a witch. As a result, she lost her true form.
The most likely explanation regarding Guideau's true form hides in the coffin that Ashaf carries on his back.
Kissing a witch allows Guideau to temporarily undo the curse and use the body that hides in the coffin: a monstrous humanoid form whose exact nature is not explained.
But is this Guideau's true form? Most likely, it is. However, since there are still questions about her curse, some fans think otherwise.
The real Guideau may be neither a young girl nor the beast in the coffin, but a secret third form that was stolen by the witch who cursed her.
Of course, Guideau does not seem to resent the monstrous body in the coffin. In fact, she relishes returning to it, making us assume that it's her true form.
But what is this form? So far, The Witch and the Beast has left this ambiguous. Ashaf describes Guideau as the only "natural enemy" of witches but does not elaborate.
He does not mention what this creature is called or whether it was born naturally or created. Some viewers interpret Guideau's true form as a biological weapon made specifically to fight witches.

For convenience's sake, the English-speaking portion of the fandom refers to Guideau using feminine pronouns. In Japanese, pronouns work differently, making Guideau's gender ambiguous.
In her usual form, Guideau is a petite girl. On the other hand, the form that hides in Ashaf's coffin has masculine abs and what sounds like a man's voice.
Some claim that Guideau's true form has no gender. Moreover, the character never mentions a preferred way of identification.
The ambiguity around Guideau's gender is in line with The Witch and the Beast's gothic sensibilities, as gothic horror often blurs the lines between all sorts of binaries.
