Sydney Adamu is one of the main characters in The Bear apart from Carmy.
In Episode 1 of the show, Carmy hires her as the sous-chef of the Original Beef of Chicagoland.
The two have a good rapport and develop a heartwarming friendship throughout the series.
Sydney doesn't have much experience when she joins Carmy's restaurant but she more than makes up for it with her talent and passion, making her a great addition to the team.

If she joined the Institute when she was about 18-20 years old, she would probably still be in her early or mid-twenties when she starts working with Carmy, having had some other work experience beforehand.
